One of the hidden treasures of Elko is the rich Mexican style cuisine served by Yolanda Rosales. Yolanda has cooked in the Elko community for 15 years. She learned how to cook as a very young child watching her mother mix ingredients and fill their home with delicious aromas. While growing up in Zacatecas, Mexico, Yolanda learned how to make chiles rellenos in her mother's colorful kitchen watching her mom roast fresh poblano peppers on a preheated comal (griddle). When she moved to the United States, she brought with her the recipes that have been passed down for generations. The rich flavors of Yolanda’s cooking bring together friends and family at her family gatherings, and now she is overjoyed to share her Mexican cuisine and bring people together at the Gathering too.
